Harvest after 1 or 2 light frosts, but before a heavy frost (under 28F). Cure the fruits by exposing them to the sun for 5-7 days after harvest, and cover if frost is likely.  The ideal storage temperature is 50-60F, and storage time is reduced by temperatures under 50.
