A type of sweet pepper widely used in Cuban and Puerto Rican cooking (a traditional ingredient in soffrito) with thinner walls than bell peppers and with a lower water content, making them ideal for frying, and also great for stuffing, roasting, or as a pizza topping. Usually picked when lime green, they will ripen to red in allowed to hand on the vine.
